Winemaking
For this batch we used 100% Sauvignon Blanc that was hand picked. It underwent carbonic maceration creating some beautiful complex characters then we pressed to tank allowing it to almost finish fermentation, (under temperature control) before bottling at 10g/L of residual sugar. This wine is also fully certified organic (ACO).
