2021 ‘The Ace’ Cabernet Sauvignon blend

Composition
85% Cabernet Sauvignon, 10% Malbec and 5% Petit Verdot

Tasting Note
A deep, dark, ruby red wine with a crimson rim. The aromatics are dominated with lifted notes of blueberry and blackcurrant, violet characters and typical Margaret River cassis amongst cinnamon and clove. Primary fruits carry over to the palate, with evidence of blackberry and briar (forest fruits).

Acid is driven with support from a dusty tannin profile which will ensure a long life.

Winemaking
Our flagship wine. A blend of two clones, one an isolate of the Houghton’s clone and one a descendent from Margaux in Bordeaux.

Utilising both of our clones, we use a mixture of open top and barrel fermentation which is hand plunged three times daily. The wine is manually basket pressed then is matured in 50% new French oak for 14 months. We choose our coopers based on their ability to increase the structure of the wine without overpowering the palate and aromatics.
